What began as a small project with purchased Pinot Noir grapes has developed in recent years into a top-tier winery, now boasting 8.5 hectares of vineyards. Today, Chat Sauvage is known for its elegant and complex Pinot Noirs and Chardonnays, which surprise and delight with their Burgundian finesse. Under the leadership of Verena Schöttle, an experienced winemaker and manager, the estate focuses on intensive manual labor and natural wine production.
