The Chat Sauvage winery represents an unusual success story in the Rheingau, where Hamburg-based entrepreneur Günter Schulz realized his dream of producing Burgundy-style wines. What began as a small project using purchased Pinot Noir grapes has developed in recent years into a top-tier winery, now boasting 8.5 hectares of vineyards. Today, Chat Sauvage is known for its elegant and complex Pinot Noirs and Chardonnays, which surprise and delight with their Burgundian finesse. Under the leadership of Verena Schöttle, an experienced winemaker and manager, the winery focuses on intensive manual labor and natural production methods. Each wine matures for up to two years in barriques and is bottled unfiltered, which underscores its complexity and minerality.
